Wellness Wednesday

Barley Bake
(not really low fat, but whole grains, and super yummy)
1 c. barley
1/4 c. butter
1 medium onion, chopped
1 pkg. onion soup mix
1 c. beef broth
1/2 c. slivered almonds
1 can water chestnuts, sliced
1 can mushrooms

Melt butter and sauté onion and barley until onion is transparent. Add remaining ingredients and cook at 350 degrees for 60 minutes, stirring occasionally.
