1/4 c. butter 1/4 c. flour 2 c. milk 2 tsp. chicken bullion granules or paste 1 can chopped green chilies 8 oz. shredded colby jack cheese 1 c. sour cream
Mix butter and flour to make a roux. Add milk all at once and whisk well to combine. Add chicken bullion and green chilies. Mix in cheese and stir well to melt. Remove from heat and fold in sour cream. Serve over corn chips with your choice of additional toppings. We like beans, chicken, olives, tomatoes, salsa, and guacamole.
