Free for All Friday

Share soups, salads, and sides. We'll try a tasty treat weekend, so if you have something sweet, post it this weekend.

Potato Rolls
Pink Popcorn
Six Cup Salad
Gooey Butter Cake

Potato Rolls

2 pkgs yeast
1/2 c warm water
1 c mashed potatoes cold
2 c milk, scalded
8 c flour
1/2 c shortening
3 eggs
2/3 c sugar
2 tsp salt

soften the yeast in 1/2 c warm water. in a bowl mix together softened yeast, potatoes, milk, shortening, eggs, sugar, salt, & 4 c flour. Mix together with mix master until smooth. Add remaining flour 1 cup at a time & knead well until mixed. You may need to add a little more flour to make the dough so you can handle, but no more than about 1/2 c. Turn into a greased bowl & let rise until double in size. Divide the dough into thirds & roll out in a circle onto a floured board. Brush with melted butter & cut into rolls. Place rolls on a greased pan & let raise about 1 hour or until doubled. Bake 350 for about 20 minutes.

Pink Popcorn

2 bags microwave popcorn, popped and picked through to remove old maids
3/4 c. Karo syrup
1/2 c. butter
2 Tbs. water
1/2 c. mini marshmallows
2 c. powdered sugar
Pink food coloring

In a large stock pot, melt Karo syrup, butter, and water, add marshmallows and powdered sugar. Bring to a boil and add food coloring. Add popcorn and mix thoroughly.

This is obviously NOT healthy in any way, as I usually try to be. But darn it, it is AMAZING! A favorite, easy treat to take to a neighbor. And always a hit.

Six Cup Salad

1 c. (I use one can) mandarin oranges, drained
1 c. (I use one can) pineapple tidbits or chunks, drained
1 c. marachino cherries, drained
1. c. mini marshmallows
1 c. coconut
1 c. sour cream

Mix well and let stand for 2 hours in the fridge before serving.

Gooey Butter Cake

Crust
1 pkg yellow cake mix
1/2 cup butter, softened
1 egg, beaten
Filling
1 (8 oz) pkg cream cheese, softened
2 cups powdered sugar
1 tsp vanilla
2 eggs
Topping
1 can cherry pie filling

Heat oven to 350. Butter 9x13 pan. In large bowl combine cake mix, buter and 1 egg; mix until well combined. Press in bottom of buttered pan. In small bowl combine cream cheese, powdered sugar, vanilla and eggs; mix until smooth and creamy. Bake at 350 for 30 to 35 minutes or until lightly browned. Serve warm or cool. Cut into squares; top with cherry pie filling.
