Where's the beef?

Let's do beef main courses today. Please share your favorites.

Simple, Easy, One-Dish Meal
Pot Roast
Lighter Beef Chili
Tamale Pie

1 lb hamburger
1 tsp. salt
1 jar spaghetti sauce (I like to use Prego)
1 can diced tomatoes
3/4 cup water
1 cup milk
2 eggs
10 uncooked lasagna noodles
grated Marbled Colby Jack cheese

Brown hamburger, drain. Add water, spaghetti sauce, diced tomatoes and salt and bring to a boil. Mix eggs and milk together. Layer in 9x13 pan. Noodles, sauce, milk mixture then cheese. Repeat 2 more times. Cover tightly with foil and bake at 375 for 1 hour. Let stand 10 minutes before slicing. Sprinkle with Parmesan chese. *You can use cottage cheese instead of egg and milk but the taste is the same when you are done.*

Simple, Easy, One-Dish Meal

1 lb hamburger
1 cup frozen peas
1 cup frozen corn
2 cups rice (cooked)
onions, garlic, chilli powder, salt, pepper, etc. to taste

Defrost, crumble, and cook up hamburger (drain grease). Meanwhile, heat/cook peas and corn in the microwave, and also cook rice (use brown, white, Minute, or long grain and cook however you want. You can also use left-over rice --just re-heat it first before using it). Add corn/peas and rice to the hamburger, stir through until mixed. If you choose to use spices, you can add them to the hamburger while it's cooking or add them when you stir in the veggies and rice.

Serve warm!

This is my favorite Pot Roast Recipe. I also LOVE the pictures posted along with the instructions.

When she mentions deglazing with wine, I deglaze with a little bit of Balsamic Vinegar instead. Step away from the pot for a second after you do because the acid will make your nose itch!

Lighter Beef Chili
from Martha Stewart Everyday Food
Serves 6
1 tablespoon vegetable oil, such as safflower
1 medium onion, chopped
4 garlic cloves, chopped
coarse salt and ground pepper
2 tablespoons tomato paste
2 tablespoons chili powder
2 tablespoons unsweetened cocoa powder
1 pound ground beef sirloin
2 cans (14.5 ounces each) diced tomatoes in juice
2 cans (14.5 ounces each) pinto beans, rinsed and drained
toppings, such as reduced-fat sour cream, sliced scallions, and baked tortilla chips, for serving (optional)
In a large, heavy-bottomed saucepan, heat oil over medium-high. Add onion and garlic, and season with salt and pepper. Cook until softened, 3 to 5 minutes.
Add tomato paste, chili powder, and cocoa powder. Cook, stirring, until mixture is fragrant, about 1 minute. Add beef, and cook, breaking up with a spoon, until no longer pink, 3 to 5 minutes.
Add tomatoes (with their juice) and beans. Bring to a boil over high; reduce to a simmer, and cook until chili is slightly thickened, 10 to 15 minutes. Serve with toppings, if desired.

Tamale Pie

1 lb. ground beef
1 can corn (drained)
2 8 oz. cans tomato sauce
1 onion, chopped
1/2 green pepper, chopped
2 tsp. cumin
1 Tbsp. chili powder
1 tsp. salt
3 c. chicken stock
1 c. yellow corn meal
1 c. shredded cheddar cheese
sour cream

Brown ground beef, add onion, green pepper, spices, tomato sauce, and corn. In sauce pan, bring chicken stock to a boil. Whisk in corn meal, stir well and pour half into a greased 9x13 pan. Spread thin, and top with meat mixture. Spread reamining corn meal mixture on top. Top with cheese and bake at 350 degrees for 30 minutes. Serve with sour cream.
